Happy New Year! IT'S 2018 AND I CANNOT BELIEVE IT! I feel like this year has gone by especially quick, but I probably said the same thing last year.
I've been neglecting this blog lately, just been busy with other things and it hasn't been much of a priority. But I've been thinking about my goals for 2018 and what I'd like to accomplish and I've decided I'm going to attempt to begin my cookbook. I've been talking about writing a cookbook for a few years now, but just thought it'd be something I would do later on in life. Then I got to thinking... why wait? It's something I want to do, so why am I waiting until I get older. I'm old enough. There's always going to be an excuse or reason why I shouldn't start. The timing is never going to be perfect. So I'm just gonna go for it. What the heck.

I'll be honest, I don't really know what I'm doing. I'm just learning as I go. But I'd love to share the process and journey with you.

That brings me to this blog... I'm going to start posting recipes that I'm thinking of including in the cookbook and I'd love to get your feedback! What Anchor menu items would you like to see in the book? And if you try out one of my recipes, I'd love to hear your feedback as to how it turns out!
I'm starting with one of the most popular soups at Anchor... the Lentil Soup.
It's easy to make and is super healthy for you; perfect for those New Year's resolutions! Plus, it's delicious, so that's a bonus. Let me know what you think of it!
Saute onions and carrots in olive oil until soft. Add spices. Cover with water. Add vegetable stock. Bring to a boil, then turn down the heat to low and add lentils and dates. Simmer until the lentils have thicken, about 15 mins, adding more water if necessary. Stir in lemon juice and parsley and cilantro. Season with salt and pepper to taste. Enjoy!
